New Restaurant 'The Lunette' to Open in Collinsville

A new restaurant and bar named The Lunette is scheduled to open soon in Collinsville. The establishment is from the team behind Brewery Legitimus and will be located with views of the Farmington River. The menu will feature craft beer and what is described as "exceptional food."

- The restaurant was opened by Christina and Chris Sayer, who are also the owners and founders of Brewery Legitimus in New Hartford, which has been in business for over eight years. - The name "The Lunette" was inspired by the half-moon "lunette" windows at the location and the French word for spectacles ("lunettes"), referencing the scenic overlook of the Farmington River. - The establishment was located at 41 Bridge St. in the Collinsville section of Canton, in a space formerly occupied by Seed 41 restaurant. - The restaurant's interior had seating for 48 people, and a large outdoor deck could accommodate an additional 60 to 80 patrons right on the river. - The menu was conceived as "upscale pub food" with European influences and featured a full bar with cocktails, wine, and beers from Brewery Legitimus. - One of the signature dishes was a peppered steak, a recipe Chris Sayer had cooked for his wife Christina early in their relationship. - After opening in early 2025, The Lunette permanently closed in May of the same year, after just a few months in business. - The owners announced the abrupt closure due to "insurmountable challenges" with kitchen staffing and rising operational costs.
