The Market by The Meat Cellar, a restaurant in south Orange County, has permanently closed. Owners Anthony and Sara Villegas announced the closure of the establishment, known for its high-quality meat. The restaurant's last day of operation was March 1.
The San Juan Capistrano restaurant, located at the River Street Marketplace, ceased operations after a brief run, having only reopened in November 2024 following a lengthy and costly construction period. This chef-driven concept combined a high-end butcher shop, a steakhouse, and an artisan market under one roof. Owners Anthony and Sara Villegas attributed the closure to financial difficulties and lower-than-expected foot traffic. The couple, who are entirely self-funded, stated that even with steady business, the revenue never reached anticipated levels, with December sales falling significantly short of projections. The Villegases are not new to the restaurant industry, having started The Meat Cellar in a 1,200-square-foot Claremont strip mall location in March 2016. Their success there led to an expansion in 2018 into a larger, historic building in the same city. The original Claremont restaurant remains in operation. In a statement, the owners highlighted the increasing economic pressures on independent restaurants, noting that the costs and logistics of operating have "skyrocketed" in the decade since they opened their first location. They expressed concern that restaurant ownership is becoming unattainable for "real people," which could lead to a future dominated by corporate hospitality businesses. Despite the setback, Anthony and Sara Villegas have indicated this is not a final goodbye. They are actively exploring other locations in Los Angeles and Orange counties and, for the first time, are open to partnering with investors for future endeavors.
