Twelve restaurants are making their debut on the 51-100 list. Seoul has the most restaurants on the extended list with seven establishments. San, a new entrant at No. 54, was also awarded the One to Watch award. Chef Jo Seung-Hyun, who trained at The French Laundry and Benu, opened San in 2024 to reinterpret Korean flavors. Singapore has four restaurants on the list: Thevar (No. 58), Burnt Ends (No. 59), Meta (No. 77), and Peach Blossoms (No. 78). Thevar jumped 12 places from last year. Peach Blossoms, a modern Cantonese restaurant, is making a comeback to the list. Two restaurants from the Philippines are featured: Toyo Eatery (No. 71) and Celera (No. 100). Celera is a new entry. Both Toyo Eatery and Celera received one Michelin star last year.
