Chef Gabriel Kreuther Opens NYC Brasserie

Acclaimed chef Gabriel Kreuther has opened Saverne, a new modern brasserie in New York's Hudson Yards. The restaurant is already generating buzz for its live-fire cooking and open kitchen, blending classic French techniques with a contemporary American style.

The restaurant's name, Saverne, is a nod to the historic town in France's Alsace region where chef Gabriel Kreuther grew up. This new venture is a departure from the fine dining of his two-Michelin-starred flagship, Gabriel Kreuther, offering a more relaxed, brasserie-style atmosphere. Saverne is located on the ground floor of the Spiral skyscraper in Hudson Yards. The 5,000-square-foot space seats 145 and features an open kitchen, allowing diners to see the flames and embers of the wood-fired grills. Executive Chef Andy Choi and Pastry Chef Nicolas Chevrieux join Kreuther in the kitchen. The menu draws heavily on Alsatian traditions, with dishes like tarte flambée, juniper-gin cured venison, and boudin noir croquettes. The menu also features some playful and luxurious twists, such as red beet spaghetti with oysters, smoked sturgeon, and caviar, and duck, foie gras, and squash tortellini. Desserts include a floating island inspired by Kreuther's childhood and a vanilla crème brûlée. Before opening his eponymous restaurant in 2015, Kreuther earned a James Beard Award for Best Chef: New York City in 2009. He arrived in New York in 1997 and worked in several acclaimed kitchens, including a notable tenure as the executive chef of The Modern.
