Tacos El Cabezon Goes Permanent

Popular food truck Tacos El Cabezon will soon debut a permanent location on Fresno's Fulton Street. The move reflects a growing trend of successful street vendors transitioning to brick-and-mortar spaces as mobile food culture matures.

The new restaurant will be located at 1234 Fulton St. in Downtown Fresno, a space formerly occupied by Chicken King. Owner Armando Arias Jr. is aiming for an opening as soon as this week, marking a significant and rapid expansion for the business. Tacos El Cabezon launched its first food truck on August 16, 2025, and quickly gained a massive following for its Mexicali-style tacos. The truck, originally at 420 W. Shaw Ave. before moving to 517 W. McKinley Ave., became known for generating huge crowds and social media buzz. The brand is famous for its East L.A.-influenced take on tacos, using USDA Prime meat cooked over mesquite wood charcoal and handmade flour and corn tortillas. The new downtown storefront is expected to feature trompos, the vertical rotating spits essential for traditional al pastor cooking. Despite its popularity, the business faced challenges, including health code violations shortly after opening its truck. Inspectors found issues with unrefrigerated food and improper permits for outdoor cooking, though owner Armando Arias worked with the county to correct the problems and bring the operation into full compliance. The move from a mobile truck to a permanent restaurant follows a path taken by other successful Fresno food vendors. Businesses like Miguel's Salsa and Taqueria, Roma Italian Kitchen, and Spicy Mayo Hibachi have also made the transition, signaling a maturing street food scene in the region.
