San Diego Taco Chain Plans National Push
A small San Diego-based taco chain announced on March 6th that it is finalizing plans to franchise nationwide. The company has not yet disclosed specific locations or a timeline for the expansion.
The San Diego chain is Mike's Red Tacos, a "beef Birria" concept that started as a food truck in 2021. The company plans to open more than 200 new locations and has already secured development agreements in states including California, Texas, Arizona, Michigan, and Virginia. The national push is being guided by a team with a strong track record in scaling fast-casual brands. The expansion is led by President Vincent Montanelli, a former executive at Wetzel's Pretzels, and backed by early-stage investors Bill Phelps and Andrew Feghali, who were key players in the rapid growth of Dave's Hot Chicken. This expansion strategy mirrors the playbook used by Dave's Hot Chicken, which grew from a small street food concept into a major national brand through franchising. Mike's Red Tacos has attracted experienced multi-unit franchisees from brands like Jersey Mike's, Blaze Pizza, and Little Caesars to fuel its growth. The brand, known for its slow-cooked beef birria and consomé for dipping, built its initial following through social media, leveraging the tagline "the dip is worth the drip." A new corporate-owned location in Pasadena, set to open this spring, will serve as a training center and prototype for the new franchise stores. The fast-casual Mexican segment is a competitive space, long dominated by burrito and bowl concepts like Chipotle and Qdoba. However, the demand for high-quality, specialized concepts like birria is growing, with projections showing it could appear on over 5% of U.S. menus by 2028. This franchise launch occurs as the broader restaurant industry faces headwinds like rising labor costs and inflation, which increases the importance of scale for survival and profitability. While some taco-focused chains filed for bankruptcy in 2024, innovative brands with strong unit economics and a clear brand identity, like Velvet Taco, have seen significant sales growth.
