Kolkata Gets Bengal-Forward Dining

The "Bengal-forward" culinary movement is deeply rooted in a "nose-to-tail" and "root-to-fruit" philosophy, a practice long embedded in Bengali home kitchens. This approach champions using every part of an ingredient, a sustainable tradition now being elevated in Kolkata's modern dining scene. This ethos is a core tenet for chefs like Auroni Mookerjee, formerly of Sienna Café, who draws inspiration from the local "bajaar" or market. At Sienna Café, this philosophy transforms the Goan street food "ros omelette" into a gourmet experience. Their version features a delicate, cheesy omelette enveloping slow-cooked confit mutton shoulder, all resting in a rich bone marrow broth, or "jhol." This reinterpretation is served with buttered "double roti," a local bread, blending regional Indian flavors with refined cooking techniques. The movement's commitment to sustainability is showcased in dishes that utilize often-discarded parts of vegetables. At Yokocho, which is helmed by Sienna's former chef, vegetable peels and scraps are given new life, served atop a bed of whipped, silken tofu. This practice is a modern take on traditional Bengali preparations like "Lauer Chechki," a classic dish made with bottle gourd peels. The innovative use of indigenous ingredients extends to the bar. The "koromcha margarita" features a local sour berry known in Bengali as koromcha, or karonda. This tart fruit, traditionally used in pickles and chutneys, is repurposed to create a uniquely Bengali-flavored cocktail, exemplifying the creative and modern spirit of this culinary trend.
