Embrace Jamaican Flavors

Chef Andre Fowles, a 3x Chopped champ, is celebrating Jamaica's multicultural cuisine in his new book *My Jamaican Table* [https://x.com/i/status/2032222226385096995]. The book features 100+ recipes showcasing Taíno, African, and Indian influences, emphasizing resilient, spicy dishes.

Fowles, a Jamaican-born chef based in New York, honed his skills in the city's competitive dining scene after graduating from the Culinary Institute of America. He is also a graduate of the HEART Trust Academy in Kingston. His cookbook includes both classic recipes and modern interpretations, such as Oxtail and Gnocchi and Escovitch Fish Sandwich. Bruce Springsteen, who wrote the foreword, calls Fowles an artist with a sense of history in everything he creates. Beyond the kitchen, Fowles is a culinary ambassador for the Rockhouse Foundation, aiding in building schools for children with special needs in Jamaica. He is also planning to open a new restaurant in Kingston and launch a "One Pot" foundation to benefit Jamaican people.
