Rachel's Restaurant and Bakery Opens in North Marais

Rachel's Restaurant and Bakery has expanded with a new location in Paris's North Marais. The popular spot is now serving its range of baked goods, pastries, and meals in the trendy district, adding a new go-to for locals and visitors.

The new location builds on a cult following founder Rachel Moeller, an Ohio native, earned by supplying her American-style cheesecakes, bagels, and buns to popular Paris spots like Le Bal Café and Le Camion Qui Fume. Before this brick-and-mortar, Moeller and her partners operated "Rachel's Cakes" out of a 60m2 apartment in Montreuil. The North Marais interior was designed by Dorothée Meilichzon, a go-to for trendy Paris hospitality spaces like Café Pinson and Hôtel Paradis. The aesthetic mixes a classic American diner feel, complete with marble countertops and spinning bar stools, with a homey vibe from shelves packed with cookbooks. Beyond the well-known pastries, the restaurant offers a full menu of updated American classics. Dishes include a New York deli-style pastrami sandwich, pulled pork, and Black Angus ribs, alongside generous salads and sandwiches. Everything from the bread to the sauces is made in-house using organic ingredients. The expansion into a full-fledged restaurant was a strategic move after five years of building a wholesale business that served up to 600 businesses, filling a niche for American-style baked goods in the city. This trajectory from a small apartment-based operation to a prominent restaurant in a fashionable district showcases a strong brand-building narrative.
