Sartiano's Italian Steakhouse Opens in Vegas

A high-profile new restaurant, Sartiano’s Italian Steakhouse, has just opened at the Wynn Las Vegas. The opening signals continued demand for celebrity-driven, large-scale dining concepts in the luxury travel sector, providing a benchmark for well-traveled guests who frequent top-tier venues globally.

The Las Vegas outpost is a more ambitious version of its New York counterpart at The Mercer Hotel, aiming for a grander, "over-the-top" experience. Hospitality magnate Scott Sartiano is expanding his footprint, opening this steakhouse adjacent to his exclusive social club, Zero Bond, which will feature a private casino and an extensive art collection. The culinary direction is led by three-time James Beard Award winner Alfred Portale, with Las Vegas native Michael Rubinstein helming the kitchen day-to-day. The concept is a modern take on the classic steakhouse, infused with Sartiano's Neapolitan heritage. Signature dishes from the New York location are on the menu, alongside new, theatrical additions for the Vegas scene. Expect tableside service, including the carving of a 40-ounce Double R Ranch dry-aged Bistecca alla Fiorentina Tomahawk and a fettuccine Alfredo presentation from a custom-built guéridon. The menu also features extravagant items like Golden Osetra Caviar Cannoli with whipped mascarpone and chive, and luxurious seafood towers. These towers include East and West Coast oysters, lobster, king crab, and caviar-topped toro. The restaurant's design, a collaboration between Wynn Design & Development and Tihany Design, is described as a reimagining of mid-century modernism, located in an exclusive alcove overlooking the Wynn Golf Club. This move signals a new era for the resort, creating a "hotel within a hotel" feel next to the Wynn's Fairway Villas. Scott Sartiano is a seasoned New York hospitality figure, known for founding the private social club Zero Bond in 2020 and several other high-profile venues like 1Oak and Butter through his company, Bond Hospitality. He is also a trustee for the Metropolitan Museum of Art.
