Denver Chef Stars in National Competition
Decorated Denver chef Michael Diaz de Leon is now starring as a contestant in "America's Culinary Cup," putting Denver's growing culinary scene in the national spotlight. Meanwhile, former "Top Chef" contestant Byron Gomez announced his departure from acclaimed restaurant BRUTØ, signaling major changes for one of the region's most innovative dining spots.
"America's Culinary Cup" is a new high-stakes competition hosted by Padma Lakshmi, featuring 16 decorated chefs from across the nation. They will compete for a $1 million grand prize, the largest in culinary television history. Michael Diaz de Leon is the chef who originally earned BRUTØ its Michelin star in 2023, along with a Michelin Green Star for sustainability. That same year, he was also a James Beard Award finalist for Best Chef in the Mountain region. Diaz de Leon actually departed BRUTØ in late 2023, shortly after securing the Michelin awards, to open his own concept, Molino Chido. Byron Gomez then took over the executive chef role at the acclaimed 18-seat tasting counter in January 2024. Gomez, a competitor on "Top Chef: Portland" (Season 18), has a resume that includes renowned kitchens like Eleven Madison Park and Daniel Boulud's restaurants. He successfully maintained BRUTØ's one-star Michelin status during his tenure. BRUTØ, located in Denver's Dairy Block, is known for its focus on zero-waste practices and a wood-fired hearth that is central to the dining experience. The restaurant's ethos is inspired by the architectural concept of Brutalism, focusing on raw, unadorned ingredients and function. Gomez's final service at BRUTØ will run through June 2026. His farewell tasting menu, available from April 1, is titled "Exploring Costa Rica" and serves as a personal look into his heritage, a theme he has not previously showcased in a fine-dining format.
