The new brasserie, Saverne, is named after a historic town in chef Gabriel Kreuther's home region of Alsace, France, reflecting a return to his culinary roots. The menu channels the hearty, rustic traditions of the area, refined with Kreuther's precise technique. This venture marks his first new restaurant in over a decade. Saverne is located on the ground floor of The Spiral, a 66-story office tower in Hudson Yards. The 5,000-square-foot, 145-seat restaurant is designed around an open kitchen where diners can see the applewood, oak, and cherry logs fueling the grills and ovens. This opening represents a more casual concept for Kreuther, whose eponymous restaurant near Bryant Park holds two Michelin stars and is known for its formal, white-tablecloth fine dining. Saverne aims for a warmer, more approachable neighborhood feel, centered on the simplicity of wood-fired cooking. Kreuther has assembled a team that includes executive chef Andy Choi and pastry chef Nicolas Chevrieux. The menu features Alsatian-inspired dishes like tarte flambée, boudin noir croquettes, and juniper-gin cured venison. The dessert menu is extensive, with 18 items, including six different sundaes. Before opening his own establishments, the Alsace-born Kreuther honed his skills in Michelin-starred kitchens across Europe. In New York, he served as executive chef at The Modern at the Museum of Modern Art, where he earned his first Michelin star and a James Beard Award.
