Phuket's Fire-Driven Cuisine Scene Heats Up

Phuket is solidifying its status as a culinary hotspot with new restaurants emphasizing fire-driven cooking, premium ingredients, and intimate tasting menus. The island is attracting top chefs and blending tropical vibes with contemporary cuisine techniques. This represents a major evolution from Phuket's traditional beach food scene toward high-end gastronomy.

The island's culinary transformation is partly fueled by international talent. British chef Simon Rogan, whose UK restaurant L'Enclume holds three Michelin stars, opened Aulis Phuket, a 15-seat chef's table experience focusing on hyper-local ingredients. Meanwhile, the Michelin-recognized Bisou Phuket was opened by chef Antoine and sommelier Théo, both of whom trained in Michelin-starred kitchens in Paris. This fine-dining evolution is layered upon a rich and diverse culinary history. Phuket's traditional cuisine is a blend of Thai, Chinese, Malay, and Peranakan influences, a legacy of its past as a major trading port. In 2015, Phuket was designated a UNESCO Creative City of Gastronomy, recognizing the depth of its food heritage long before the recent wave of high-end, fire-focused restaurants. The fire-based cooking trend has several notable hotspots. ETNA Phuket, located in Bang Tao, centers its menu on open-fire grilling, smoking, and charcoal cooking, using local Andaman seafood and herbs from Northern Thailand. Similarly, Sea Fire Salt at the Anantara Mai Khao resort was recently renovated to sharpen its focus on flame-grilled dishes, featuring premium meats and local seafood. Another is Prime: The Home Of Smoke And Fire at The Nai Harn hotel, which offers an intimate, 14-seat alfresco dining experience with a fire-kissed menu. Accolades are drawing further attention to the island's chefs. Chef Suwijak "Mond" Kunghae of Royd, a restaurant celebrated for its innovative southern Thai cuisine, won Michelin's Young Chef of the Year award for 2026. At Tambu, which was featured in the Michelin Guide 2025, "Iron Chef Thailand" winner Saurabh Sachdeva crafts a 7-course tasting menu centered on open-flame artistry.
