Forage Kitchen to Open in Brookfield
Forage Kitchen, a fast-casual restaurant chain focused on healthy food options, is expanding to Brookfield. The Milwaukee-area chain plans to open the new location by late 2025. A specific address and official opening date for the new restaurant have not yet been determined.
- The Wisconsin-based chain was founded in 2015 by Henry Aschauer, a 2010 graduate of the University of Wisconsin-Madison. - Forage Kitchen emphasizes a "farm-to-fork" philosophy, sourcing ingredients from local Wisconsin producers such as Carr Valley Cheese, Flynn Creek Farm Produce, and Breadsmith. - The menu focuses on salads, grain bowls, wraps, and soups, with popular items including the Power Bowl (organic black rice, roasted sweet potatoes, lentils, and avocado green goddess dressing) and Forage Chili. - In addition to food, the chain produces its own line of organic beverages, including kombucha and fruit-based tepache. - The Brookfield restaurant will join a growing roster of locations that includes spots in Madison, Pewaukee, Whitefish Bay, Sun Prairie, and the Milwaukee Public Market. - The expansion into Brookfield comes as the area, particularly The Corners of Brookfield, sees a wave of new retail and dining establishments, including the brunch-focused restaurant Waking Daisy which opened in summer 2025.
