Tacos El Cabezon Expands Downtown
Fresno favorite Tacos El Cabezon is preparing to open its first downtown location, expanding the popular taco shop's reach to a new local audience. The move represents the kind of local success story that's defining California's street food expansion beyond the major metros.
The new downtown Fresno spot for Tacos El Cabezon is located at 1234 Fulton Street, in a space formerly occupied by Chicken King. This marks a significant expansion for the business, which rapidly gained a large following as a food truck. The man behind the popular taco spot is owner Armando Arias Jr., who launched the business in August 2025. The venture quickly became a sensation, known for its Mexicali-style tacos with an East L.A. influence, drawing large crowds from its initial location at 420 W. Shaw Ave. Tacos El Cabezon is particularly known for its trompos, the traditional vertical rotating spits used for cooking al pastor. Their menu focuses on high-quality ingredients, with a Reddit thread noting their use of USDA Prime meat cooked over mesquite wood charcoal and handmade tortillas. The journey from a food truck to a permanent restaurant hasn't been without challenges. In December 2025, the business faced scrutiny from the Fresno County Department of Public Health regarding health code violations at its outdoor setup. Owner Armando Arias stated that he worked to correct the issues and bring the operation into full compliance. The brand's rapid growth from a popular truck, which has since moved to 517 W. McKinley Ave., to a brick-and-mortar establishment reflects a broader trend of mobile food vendors establishing permanent storefronts in the Fresno area.
