Downtown Denver Dining Revival Accelerates

A new wave of restaurant openings is fueling a quiet dining revival in downtown Denver, with diverse concepts and chef-driven eateries opening in previously quieter blocks. The trend is bringing fresh energy and culinary options for both locals and visitors to the city center.

This revival follows a challenging period for Denver's restaurant industry. Between June 2023 and June 2024, the city accounted for 82% of the entire state's net loss of restaurant establishments, a decline of 183 businesses. The shift to remote work was a major factor, with downtown office vacancy rates climbing to over 38% by the end of 2025. The rebound is fueled by a significant increase in people returning to the city's core. Pedestrian foot traffic in December 2025 reached 99% of pre-pandemic levels, a dramatic recovery capping a year that saw an average of 3,400 more daily visits compared to 2024. This surge has been driven primarily by residents and tourists, with the return-to-office rate for weekday employees lagging at a 66% recovery rate. In 2025, downtown Denver welcomed 72 new ground-floor businesses, leading to a net gain of 39 new openings and a ratio of roughly three openings for every one closure. This marks an acceleration from the 50 new businesses that opened in the area during 2024. The new wave of eateries includes a notable rise in high-end, experience-focused dining. At least three omakase sushi counters opened in 2025, including Kizaki, from the founder of the iconic Sushi Den, which quickly earned a Michelin star. Other new concepts range from Peruvian-inspired cuisine to modern Mexican and Taiwanese fare. This growth coincides with major public investments, like the reopening of the 16th Street Mall. The grand opening celebration in October 2025 alone brought an estimated 30,000 people downtown, signaling renewed energy and interest in the central corridor.
