Alinea Announces Las Vegas Residency
Chicago's three-Michelin-starred restaurant Alinea will launch an exclusive culinary residency at the Bellagio in Las Vegas from April 16 to May 31. The collaboration will feature immersive, multi-sensory menus for 100 guests per night, exporting Chicago's culinary artistry to a global stage.
- This residency is the final stop on Alinea's 20th-anniversary tour, which also included sold-out events in Brooklyn, Miami Beach, Beverly Hills, Tokyo, and Big Sky, Montana. - Chef and co-owner Grant Achatz is a pivotal figure in modernist cuisine and was featured on the Netflix series "Chef's Table"; he began his career in his family's Michigan diner before training at renowned restaurants like The French Laundry and elBulli in Spain. - The residency will be held inside celebrity chef Michael Mina's eponymous restaurant at the Bellagio, a space known for its views of the famous fountains and proximity to the Conservatory & Botanical Gardens. - Alinea's co-founder, Nick Kokonas, also created the reservation platform Tock, which revolutionized restaurant booking by treating dining like a ticketed event, a system Alinea pioneered. - This is not Alinea's first major residency; in 2016, the restaurant relocated its entire staff for pop-ups in Madrid, Spain, and Miami, Florida, while the Chicago location underwent a complete renovation. - In Madrid, the Alinea pop-up involved a collaboration with chef David Muñoz of the three-Michelin-starred DiverXO, where guests would start their meal at one restaurant and move to the other midway through. - The Alinea Group's other acclaimed Chicago establishments include Next, a restaurant that completely changes its historical theme and menu several times a year, and The Aviary, a groundbreaking cocktail lounge. - Grant Achatz famously overcame a diagnosis of Stage IV tongue cancer, which he chronicled in his memoir "Life, On the Line"; he pursued an innovative treatment that saved his ability to taste.
