Five Sails Teams with Michelin Stars

Five Sails restaurant recently hosted a collaboration dinner with two-Michelin-starred Tanière³, showcasing signature dishes from both teams. Highlights included a smoked scallop and Quebec venison, demonstrating the potential of cross-restaurant partnerships to create unique, high-profile culinary experiences.

The "Four Hands" dinner, part of the Visa Infinite Dining Series, took place on February 26th and 27th, 2026. The exclusive eight-course menu was priced at $250 per person, a fee that included wine and cocktail pairings, as well as tax and gratuity. The collaboration brought together two of Canada's most celebrated chefs. Five Sails' Culinary Director, Alex Kim, was the winner of the 2025 Canadian Culinary Championships and a runner-up on Top Chef Canada. Representing Tanière³ was chef and co-owner François-Emmanuel Nicol, who has trained in prestigious kitchens around the world, including in France, Australia, and Spain. Tanière³, located in Quebec City, holds two Michelin stars, making it the only restaurant in the province and the second in Canada to achieve this distinction. The restaurant is also ranked number five on the list of North America's 50 Best Restaurants. Tanière³ is known for its immersive dining experience and its menu, which exclusively features ingredients indigenous to Quebec. The collaborative menu was a dialogue between Canada's coasts, merging the Pacific Northwest's bounty with Quebec's terroir-driven cuisine. Courses included a Pacific bluefin tuna with a kale and foie gras vinaigrette and a kombu-cured scallop and sablefish terrine, a dish that helped Chef Kim win his Canadian Culinary Championship title. Tanière³, meaning "den" in English, is situated in the historic stone vaults of a 17th-century building in Old Quebec, a UNESCO World Heritage site. The restaurant, in its third iteration (Tanière³), offers a hyper-seasonal tasting menu of 12 to 18 courses. Five Sails, located in Vancouver's Pan Pacific Hotel, is renowned for its sweeping harbour and mountain views. The restaurant, which opened in 1986, was acquired by the Glowbal Group in 2020 and has been reinvigorated under Chef Kim's culinary direction.
