Vaarta in Goa, India, offers interactive fine-dining street food in a 160-year-old heritage home, featuring live Puchka counters. Tucked away in the village of Sangolda, Vaarta is the vision of founder Neha Mehta. Her goal was not to simply recreate street food, but to give it a dignified space where the experience is about memory and conversation, moving beyond the typical chaat counter. The restaurant's design intentionally lets the 160-year-old Goan home's history lead. Original architectural elements like intricate arches, aged flooring, vintage windows, and even old-world round bakelite power switches have been thoughtfully preserved to create an intimate and unhurried atmosphere. Beyond the live Puchka counter, the interactive experience includes a 'Make Your Own Barf Ka Gola' cart brought directly to the table. This allows diners to customize their ice dessert with various flavors and spice levels, turning a nostalgic childhood treat into a shared moment. The menu extends far beyond Puchka, offering a culinary journey across India's diverse street food traditions. Guests can find everything from Palak Patta Chaat and Jhal Muri to heartier dishes like Chelo Kebab and Dalcha Gosht, showcasing a wide range of regional flavors. The bar menu mirrors the kitchen's innovative spirit, reinterpreting familiar Indian tastes. Signature cocktails include the Pani Puri Popper, Kala Khatta Kamikaze, and Masala Chai Martini, creating a playful yet elevated beverage experience.
