Three New Restaurants Coming to Escondido Quality Inn

The Quality Inn in Escondido is set to become a new dining spot, with plans to house three new restaurants. Details on the types of cuisine or the specific restaurant concepts have not yet been released.

The new dining options will be a Pollo Campero, a Starbucks, and a Chipotle, all with drive-thru service. These restaurants are expected to open by the end of 2025 or early 2026. The project is being developed by Nilesh Patel of Stoneview Properties, who also owns the local Quality Inn franchise. This development has been a long-term goal for the Quality Inn, which opened in 2019 on the site of the former Mount Vernon Inn. The new eateries are being built on a five-acre plot adjacent to the 82-room hotel, replacing a Vietnamese pho restaurant that was demolished a couple of years ago. The project faced significant delays due to permitting issues with the city. Escondido's Mayor, Dane White, personally intervened to help move the development forward after meeting with the hotel's owner and general manager. As part of the restaurant construction, significant infrastructure changes are being implemented on the adjacent Centre City Parkway. These improvements include the installation of a new traffic light and a dedicated right-turn lane to manage traffic flow into the new dining complex.
