Winter Salads Get Seasonal Twist

Chef Reilly Meehan's delicata squash, pomegranate, and goat cheese salad with cumin yogurt demonstrates that salads can be both comforting and vibrant in winter. The recipe shows how seasonal produce can create satisfying cold-weather dishes.

Delicata squash, a key ingredient, is a good source of fiber, potassium, and vitamins A and C. Its thin skin is edible, making it easier to prepare than many other winter squashes. The flavor is often compared to a sweet potato or butternut squash with a nutty hint. Pomegranates, which add a vibrant element to the salad, are typically in season in the Northern Hemisphere from September to February. The fruit is rich in antioxidants, particularly punicalagins, which are also found in the juice and peel. Historically, pomegranates have been symbols of fertility, abundance, and rebirth in various cultures, including ancient Greece and Egypt. Goat cheese provides a creamy texture and tangy flavor, along with protein, calcium, and healthy fats. It contains more medium-chain fatty acids than cow's milk cheese, which are more rapidly absorbed by the body. Depending on the type, goat cheese can also contain beneficial probiotics. The cumin yogurt dressing adds another layer of flavor and health benefits. Cumin is known to aid digestion and contains flavonoids that act as antioxidants. Studies have shown that consuming cumin, in some cases with yogurt, may help in managing cholesterol levels.
