America's Largest Food Cart Plaza Opens
Vancouver, Washington has just soft-opened what's being billed as the largest food cart plaza in America on the city's east side. The sprawling venue promises dozens of carts offering global cuisines and aims to become a destination for both locals and traveling foodies. Meanwhile, Sqirl in LA is now serving a new dinner menu, expanding beyond its beloved brunch staples.
The new Vancouver Station food cart plaza is located off Southeast 164th Avenue and has space for 44 food carts. The project is owned by Tai Dang, who also operates a sister location, the Hillsboro Downtown Station in Oregon. The sprawling venue features a two-story central building with a full bar, an indoor coffee shop, and an ice cream parlor. The development is intended to be a destination, with plans for live music, DJs, and trivia nights. Although the soft opening has begun, only eight carts are currently operational as others await permitting. The general manager, Ryan Biornstad, expects most of the spots, which are already spoken for, to be filled in the coming weeks, with a grand opening anticipated for spring 2026. This new plaza is part of a growing trend in Clark County, which is seeing a shift from single food trucks to larger, more permanent community-focused food cart developments. Other notable food cart pods in the area include Oak Tree Station in Camas and the planned Prairie View Station.
