Gordon Ramsay Opens Cheshire Restaurant
Gordon Ramsay is set to open a new restaurant inside a luxurious, newly renovated Cheshire hotel. The venue promises world-class dining and marks another expansion for Ramsay's global empire, bringing his signature style to a region undergoing a hospitality transformation.
The new restaurant, named "Gordon Ramsay at The Mere," is slated to open in the summer of 2026. It will be the signature restaurant at The Mere resort in Knutsford, which is undergoing a £60 million transformation and rebranding to become Fairmont Cheshire, The Mere. This opening marks Ramsay's first fine-dining venture outside of London in over two decades. His last one, Amaryllis in Scotland, closed in 2004. The new Cheshire location signifies a strategic expansion for Gordon Ramsay Restaurants Global into the UK's regional luxury market. The restaurant is part of a continued partnership with Fairmont Hotels and Resorts. Ramsay already operates three successful restaurants at the Fairmont-managed Savoy hotel in London: the Savoy Grill, The River Restaurant, and the Michelin-starred Restaurant 1890. The Gordon Ramsay restaurant group, founded in 1998, operates over 90 restaurants globally and holds a total of nine Michelin stars. His flagship, Restaurant Gordon Ramsay in Chelsea, has maintained three Michelin stars for over two decades. The Mere resort is set on a historic estate first recorded in the Domesday Book of 1086. The extensive refurbishment will increase the hotel's capacity to 116 rooms and enhance its wellness and public spaces, aiming to become the premier luxury hotel in North West England. Ramsay's arrival coincides with significant growth in Cheshire's hospitality sector. The region's visitor economy surpassed £4.32 billion in 2024, matching pre-pandemic levels, with visitor numbers reaching 59.3 million. A recent study ranked Chester as the UK's second fastest-growing city for hospitality.
