Monika's European Kitchen in Largo, FL, is drawing attention for slow-cooked "soul food" inspired by Hungary, Germany, and Poland, offering a taste of heritage cuisine in a casual setting. The restaurant brings old-country recipes to Florida's dining scene.

The restaurant is a family affair, run by husband-and-wife team Chad and Monika Belson. Monika, the executive chef, hails from Budapest, Hungary, while Chad has Polish and Belarusian roots. Their goal is to share the slow-cooked "soul food" of their childhoods and family recipes with the Tampa Bay area. Monika's European Kitchen opened in late November 2025 in the space formerly occupied by the German restaurant Jägerstüble. The Belsons have kept some of the beloved German dishes on the menu and the previous owners act as consultants to ensure their quality. This creates a unique blend of Hungarian, Polish, and German culinary traditions. The restaurant has a direct pipeline to authentic sausages and smoked meats, sharing a kitchen with Hirs Sausage Market next door. This allows for signature dishes like the palóc soup, a hearty dish made with in-house smoked ham, pork, and sausage that takes all day to prepare. The menu features comforting classics such as Hungarian goulash and chicken paprikás with dumplings. Future additions are expected to include pierogies and Polish-style potato latkes based on Chad Belson's grandmother's recipes, further expanding the Eastern European offerings. The restaurant's location in Largo is fitting, as the area has a notable population with European roots. Census data indicates that 17.1% of Largo residents report German ancestry and 8.1% report Polish ancestry. A smaller but present 1.0% of the population claims Hungarian ancestry.
