The recent menu refresh at Dilworth Tasting Room is part of a larger vision from owner Jaffer Kovic, who draws inspiration from his Croatian roots and Mediterranean travels. The aim is to create a unique identity for each of the three locations, tailoring the menu and atmosphere to the specific character of the Dilworth, SouthPark, and Plaza Midwood neighborhoods. The original Dilworth location, which opened in 2016, is known for its charming and intimate garden patio centered around a koi pond. The SouthPark restaurant, which took over the former Corkbuzz space in 2021, offers a more polished and upscale ambiance with a prominent, artfully backlit wine wall. The newest addition in Plaza Midwood is designed to reflect the neighborhood's vibrant and artistic energy, with a greater emphasis on the owners' Croatian background. While longtime favorites like the prosciutto and brie flatbread have been a staple, the new menu focus is on shareable, Mediterranean-inspired plates. At the Plaza Midwood location, new dinner options include Lemon Tahini Halibut and Coconut Shrimp. Meanwhile, the SouthPark menu has introduced dishes such as Pan-Seared Branzino with Tuscan white beans and Steamed Clams with Calabrian peppers in a white wine and garlic butter sauce. This culinary shift is overseen by Chef Jonathan Shuler, who works to blend traditional Mediterranean techniques with modern culinary innovation. The beverage program has also been a focus, with Bar Director Alejandro Ibanez creating inventive, seasonal cocktails designed to complement the fresh flavors of the new dishes. The wine list, curated by owner and sommelier Jaffer Kovic, continues to be a central feature across all locations.
