Cote was founded in 2017 by Korean-American restaurateur Simon Kim, who sought to blend the Korean BBQ experience with elements of a classic American steakhouse. Before Cote, Kim operated Piora, a Michelin-starred restaurant in the West Village. The restaurant dry ages its steaks in-house and is the only Korean steakhouse in NYC with a dry aging room. Cote earned a Michelin star within a year of opening, and its wine list has been noted as "particularly interesting" by the Michelin Guide. The restaurant has also received accolades from the James Beard Foundation, including nominations for Best New Restaurant and Outstanding Wine Program. In 2025, Cote was ranked among the top 10 steakhouses in the world. The "Butcher's Feast" is a popular option, featuring four cuts of beef with banchan, egg soufflé, and stews. The restaurant's wine list boasts over 1,200 labels. Cote also offers a subterranean cocktail lounge called Undercote. Cote has expanded to Miami and Las Vegas, each holding a Michelin star. The restaurant opened its first international location in Singapore in 2023. Simon Kim's Gracious Hospitality Management plans to open a fried chicken restaurant called Coqodaq in New York.
