KARYU, the U.S. debut of Tokyo's Michelin one-star Oniku Karyu, officially opened in Miami's Design District on February 4, 2026. Chef Haruka Katayanagi leads the restaurant, partnering with Spicy Hospitality Group to introduce wagyu kaiseki to the United States. The restaurant only has 12 seats and serves a multi-course menu centered almost entirely around Japanese beef. The menu is tied to the Japanese calendar, changing monthly to reflect the country's microseasons. KARYU is the only restaurant in the United States serving wagyu from Ueda Chikusan, a family-run ranch in Hyōgo Prefecture that raises Tajimaguro cattle. The beverage program features a concise list of approximately ten sakes and a focused wine selection to complement the umami-driven wagyu.
