Q.E.D. Coffee Opens New Location in Burien
Q.E.D. Coffee opened a new shop at the historic Three Tree Point Store in Burien on February 23rd. The new location will serve coffee and other beverages to the local community.
- The new café is Q.E.D. Coffee's third location, joining its spots in Seattle's Mount Baker and West Seattle neighborhoods. - Founder Matt Greenfield, who holds a degree in mathematics, named the roaster "Q.E.D." as an acronym for the Latin phrase *quod erat demonstrandum*, a term used to conclude a mathematical proof. - Greenfield started the company by roasting coffee in his West Seattle garage in 2014 before opening the first café in 2015. - The Three Tree Point Store building dates back to 1903 and was Burien's first grocery store. Over the years, it has also housed a butcher shop, a library, and a dive shop. - Before Q.E.D. moved in, the property was recently home to a different business, also called the Three Tree Point Store, which moved to a new location in downtown Burien in August 2025. - Initial operating hours for the new Q.E.D. location are set for 7 a.m. to 2 p.m. daily. - Owner Matt Greenfield has expressed plans to introduce community events in the evening, such as trivia nights and wine tastings. - The building's owner, Todd Manola, undertook a careful restoration of the historic property after purchasing it. This was enabled by a 2021 change in Burien's zoning code to allow for the reopening of "Legacy Storefronts" in residential areas.
