Smash‑burger spreads fast
A popular NYC‑based smash burger chain has opened its second Boston store within weeks as part of a rapid Northeast expansion. (yahoo.com) The genre is also going global — Street Smash Burgers just opened its first Rome location, underscoring smash burgers’ international momentum. (metropolitanmagazine.it)
Boston got two 7th Street Burger openings in about three weeks: the chain opened at 267 Newbury Street on March 20, 2026, then opened at 475 West Broadway in South Boston on April 9, 2026. (yahoo.com) (newsbreak.com) That pace is fast for a chain that started as a single New York City storefront in 2021 and now lists locations across New York, New Jersey, Pennsylvania, Maryland, Virginia, Connecticut, Massachusetts, and Washington, District of Columbia. (7thstreetburger.com) (bostonnewsroom.com) The product is deliberately narrow: 7th Street Burger built its name on a thin beef patty pressed onto a hot griddle, then stacked with American cheese, grilled onions, pickles, and house sauce on a potato bun. (7thstreetburger.com) (wickedlocal.com) That “smash” part is the whole trick: pressing a loose ball of beef flat increases contact with the griddle, which creates a dark crust through the Maillard reaction, the browning process that makes seared meat taste deeper than steamed meat. (seriouseats.com) (bonappetit.com) The format also travels well because it is built for speed. A small menu, flat-top grill, fries, and counter service are easier to copy from one city to the next than a full diner menu with dozens of ingredients. (qsrmagazine.com) (7thstreetburger.com) Boston is not the only place where the style is spreading. Street Smash Burgers opened its first Rome shop on Via Lorenzo il Magnifico 22 in the Piazza Bologna area on April 9, 2026, after building a presence in Milan. (metropolitanmagazine.it) (streetsmash.com) Street Smash now says it operates in Lisbon, Porto, Zurich, Rome, and Milan, which means the same burger format that took off in New York is now being standardized across Southern and Central Europe too. (streetsmash.com) Rome already had local smash-burger players before this opening. RomaToday says Smash Tag started near Piazza Bologna in 2021 and later added Prati, Ponte Milvio, Mykonos, and Athens, so Street Smash is entering a market where the format is already familiar rather than trying to teach people what it is. (romatoday.it) What looks like one Boston restaurant opening is really a sign of a category getting copied city by city: one chain from Manhattan adding New England stores, and another brand using Milan as a base to push into Rome and beyond.
