New Mexican Restaurant 'Amado' to Open in Burlingame
A new restaurant named Amado, which will highlight regional Mexican cuisines, is set to open in Burlingame in March. The menu will feature dishes from specific areas, such as cochinita pibil, a slow-roasted pork from the Yucatan region. The opening adds a new option for regional Mexican food on the Peninsula.
- The restaurant is a project from the Dominguez family, who have been operating popular Mexican restaurants in the Bay Area for nearly 40 years. Chef Gloria Dominguez will lead the kitchen. - The menu aims to cover a wide range of Mexican regions, moving beyond the more common single-region focus. Dishes will include scallop aguachiles from Baja California, chiles en nogada from Puebla, and goat birria and tortas ahogadas from Jalisco. - Chef Gloria Dominguez has a particular interest in moles and plans to serve varieties not commonly found in the area, such as a pink mole from Guerrero and a guava mole from Aguascalientes. She traveled to Mexico to research dishes and learn from traditional cooks and chefs in various villages and cities. - The restaurant is located at 1100 Burlingame Ave. in downtown Burlingame, in a space that formerly housed the aircraft-themed restaurant Flights. The interior has undergone a full gut renovation over seven months to create a modern space inspired by contemporary restaurants in Mexico City. - The bar program will have a strong focus on agave spirits, featuring not only tequila and mezcal but also less common distillates like bacanora, raicilla, and sotol. - The family's previous iconic restaurant was Tamarindo Antojeria, which they opened in 2005 and closed in 2019, specializing in antojitos, or small plates. - The opening is anticipated for February, pending final inspections and the hiring and training of approximately 60 employees. The dining room is expected to seat around 126 guests. - The name "Amado" means "beloved" in Spanish.
