The trend is pushing chefs to create lighter, more creative dishes and beverage pairings.
The pivot to a fully plant-based menu at Chef Daniel Humm's Eleven Madison Park in 2021 initially earned the restaurant three Michelin stars. However, by late 2025, the restaurant reintroduced select meat and fish dishes, with Humm noting the vegan concept unintentionally excluded some guests, particularly impacting the booking of lucrative private and corporate events.
