Gordon Ramsay Opens Cheshire Restaurant

Gordon Ramsay is opening a new venue inside a luxurious, newly transformed hotel in Cheshire following a multi-million pound renovation. The opening is expected to bring world-class dining to the region and attract both locals and destination diners. This expands Ramsay's global restaurant portfolio into the UK's countryside luxury market.

The new restaurant, named "Gordon Ramsay at The Mere," is scheduled to open in the summer of 2026. It will be the signature restaurant of the Fairmont Cheshire, The Mere hotel, located on the outskirts of Knutsford. This venture marks Ramsay's first fine-dining establishment outside of London in more than two decades. His last one, Amaryllis, was in Scotland and closed in 2004. The restaurant is part of a larger £60 million transformation of The Mere Golf Resort & Spa. Dubai-based developer Select Group acquired the 157-acre estate in 2022 and partnered with the Fairmont hotel group in 2023 to manage the property's extensive overhaul. The renovation will increase the hotel's capacity from 81 to 116 rooms, including 27 suites, and will also feature redesigned public spaces and upgraded wellness facilities alongside the 18-hole championship golf course. This opening deepens an existing relationship between Ramsay and Fairmont, as he already operates three restaurants at The Savoy in London, another Fairmont-managed hotel. These include the Savoy Grill, the River Restaurant, and the Michelin-starred Restaurant 1890. The Cheshire location is a strategic UK expansion for Gordon Ramsay Restaurants Global, following the opening of Lucky Cat in Manchester in 2023. The group is also set to open its 100th restaurant globally in London in May 2026.
