Cleveland to Get New Restaurant 'ROSY'
Chef Vinnie Cimino, an Akron native and three-time James Beard nominee, will open a new open-fire neighborhood restaurant named ROSY. The establishment will be located in Cleveland's Hingetown neighborhood and aims to provide a communal dining experience.
- ROSY is the second restaurant from Chef Vinnie Cimino and proprietor Andrew Watts, the team behind the acclaimed downtown Cleveland restaurant Cordelia. Their established partnership dates back to their time working together at The Greenhouse Tavern. - The restaurant officially opens on February 26, 2026, in the 50-60 seat space that formerly housed the Mediterranean restaurant Alea. ROSY will be open for dinner service five days a week, Thursday through Monday. - The menu is described as "ancestral European," drawing inspiration from the coastal cuisines of the Istrian Peninsula, which includes parts of Italy, Slovenia, and Croatia. The concept moves beyond Cordelia's "Modern Grandma" style to explore older, old-world cooking techniques. - A central feature is the open-fire hearth, which is integral to the preparation of a hyper-seasonal and rotating menu. The restaurant sources at least 80% of its ingredients from farmers and producers within a 200-mile radius. - Instead of a traditional printed menu, ROSY features a "live menu" on a wall-mounted display, with dishes changing frequently based on the availability of fresh ingredients. The format focuses on communal and shared plates. - One unique offering is the "Rosy Boy," a tavern-style, dry-aged wagyu Angus beef burger that is available only on Mondays, with a limited quantity of 20-25 offered each night. - The beverage program complements the menu's theme with a focus on Old World wines from lesser-known and cool-climate European regions, alongside a selection of vermouths and amari. - The name "ROSY" is not a person but reflects the optimistic and grateful outlook of the founders, aiming to create a feeling of warmth and Midwestern kindness.
