Fat Rosie's Opens at Orlando's Waterford Lakes

A new Fat Rosie's Mexican restaurant is set to open at Waterford Lakes Town Center in Orlando this week. The restaurant promises a "fiesta-filled experience" and adds a new dining option to the busy shopping center.

This Orlando opening marks the first location outside of Illinois for the Chicago-born Fat Rosie's brand. The parent company, Mas Mex, is a part of Scott Harris Hospitality, which operates a diverse portfolio of concepts primarily focused on Italian cuisine, making this Mexican-themed expansion notable. The choice of Waterford Lakes Town Center is a strategic one, placing the new 6,675-square-foot restaurant in the most visited lifestyle center in Florida. The open-air mall sees 14.3 million annual visitors and is owned by commercial real estate giant Kimco Realty. Mas Mex CEO John Iannucci pointed to Orlando's "booming population, thriving tourism and reputation as an emerging foodie hotspot" as key drivers for the expansion. This move aligns with a broader trend of national restaurant brands entering the growing Central Florida market. The decision is backed by strong local economic indicators. The Orlando metro area saw a 2% increase in private sector jobs year-over-year in January 2025, led by the Leisure and Hospitality sector which added 11,100 jobs. Fat Rosie's "Fluent in Fiesta" approach, which emphasizes a high-energy, family-friendly experience with authentic decor sourced from Mexico, taps into the consumer trend of seeking experiential dining. The brand's story itself is rooted in an encounter with a donkey on a rural agave farm in Mexico.
