Las Vegas Steakhouse Carversteak Opening in NYC
Carversteak, a high-end steakhouse from Las Vegas known for its premium cuts and lavish atmosphere, is planning to open its first location outside of Nevada in Manhattan. The expansion brings a prominent Vegas dining brand to the competitive New York restaurant scene.
Parent company Carver Road Hospitality is already familiar with the New York market, operating the Rosevale Kitchen + Cocktail Room and the Starchild Rooftop Bar & Lounge at the CIVILIAN Hotel in Hell's Kitchen. The upcoming steakhouse, dubbed Carver 48, will be located at 305 W. 48th St., joining the company's other establishments in the hotel. The Las Vegas original is a 13,500-square-foot behemoth at Resorts World, known for its grand scale and a menu helmed by Executive Chef Daniel Ontiveros. Ontiveros, a veteran of Michelin-starred kitchens like Joël Robuchon and Bouchon Bistro, will also oversee the culinary operations for the new New York location. Diners in New York can likely expect a menu similar to the Vegas outpost, which features premium cuts like Japanese-certified A-5 Wagyu, a 50-ounce F-1 Westholme Tomahawk, and a 28-day dry-aged Kansas City strip. Signature appetizers in Las Vegas include Wagyu cheesesteak bites and caviar poppers, pointing to a high-end, theatrical dining experience. Carversteak's arrival is part of a larger trend of prominent Las Vegas eateries expanding to New York City. Recently, the iconic Las Vegas steakhouse Golden Steer, a haunt of Frank Sinatra and The Rat Pack, opened its first-ever outpost in Greenwich Village, signaling a growing appetite for Vegas-style dining in the competitive Manhattan scene.
