- The expansion utilizes a "ghost kitchen" model, with one of the kitchens located in the San Mateo Food Mall at 66 21st Ave. - This model allows for trying out new restaurant concepts at a lower cost than a traditional lease, according to lead shift runner Neo Morente. - In addition to San Mateo, the menu is available for pickup or delivery from hubs in Sunnyvale, San Jose, Hayward, San Francisco, and Emeryville. - Lotus and Lime is part of a larger family of brands that includes Ben's Fast Food, Umami Express, and Palmita, all of which share a focus on scratch-made, clean-ingredient meals. - The restaurant group is family-owned and focuses on a takeout and delivery model to maintain quality while expanding. - The menu centers on bowls with a base of purple rice and leafy greens, featuring Thai and Vietnamese flavors like ginger, lime, and tamarind. - Manager Miguel Lopez notes that the Wagyu beef bowl is a favorite item on the menu.
