Gabriel Kreuther Opens NYC Brasserie

The new brasserie, Saverne, is named after a town in the Alsace region of France, where chef Gabriel Kreuther grew up. This region's cuisine is known for its unique blend of French and German culinary traditions, often featuring hearty dishes. The restaurant is located on the ground floor of The Spiral, a skyscraper in Hudson Yards. Kreuther is a highly accomplished chef with a background in Michelin-starred kitchens across Europe. Before opening his own restaurants, he was the executive chef at The Modern, located in the Museum of Modern Art, where he earned critical acclaim. His nearby eponymous restaurant, Gabriel Kreuther, holds two Michelin stars and is a member of the prestigious Relais & Châteaux association. Saverne offers a more relaxed and approachable atmosphere compared to Kreuther's fine dining establishment, focusing on a rustic yet elegant menu. The centerpiece of the 5,000-square-foot space is an open kitchen with applewood, oak, and cherry-log-fueled ovens and grills, making live-fire cooking a theatrical element of the dining experience. The restaurant seats 145 guests and aims to be a neighborhood gathering spot. The menu at Saverne is a journey through Alsatian cuisine with modern New York twists. Diners can expect dishes like tarte flambée, a thin-crusted Alsatian pizza, in several variations, including a classic with onion and bacon. Other offerings include boudin noir croquettes, wood-grilled swordfish, and juniper-gin cured venison. The dessert menu, created by pastry chef Nicolas Chevrieux, features items like cherry clafoutis and a floating island inspired by Kreuther's childhood.
