Mark and Charmaine McHugo said Chapters, their Michelin Green Star restaurant in Hay-on-Wye, will serve its last dinner on May 16. (thecaterer.com) The husband-and-wife team opened Chapters in Powys in 2019 as their first restaurant. The 22-cover site operates from converted meeting rooms at St John’s Chapel on Lion Street. (thecaterer.com) (guide.michelin.com) In their closing message, the McHugos said the restaurant’s model was “personal and intimate,” with Mark in the kitchen and Charmaine running the room. They said “seven years is a long time” and that it was time to “hand over the reins.” (thecaterer.com) Chapters built its reputation around local, hyper-seasonal food and low-waste cooking. Michelin’s guide says the restaurant used a no-dig garden and followed a “Reduce, Reuse, Recycle” approach across the business. (guide.michelin.com) Michelin added Chapters to its Green Star community in February 2022. The guide gives that award to restaurants it says are at the front of sustainable hospitality. (guide.michelin.com) The restaurant’s own site says it serves a changing set menu on Thursday, Friday and Saturday evenings, using locally sourced, homegrown and foraged ingredients. It also runs a bottle shop focused on natural and organic wines. (chaptershayonwye.co.uk) (guide.michelin.com) The space will not stay dark for long. The Caterer reported that the couple plan to reveal later this week who will take over the St John’s Chapel site. (thecaterer.com) For now, the final service date puts an end point on one of Hay-on-Wye’s best-known destination restaurants, seven years after the McHugos opened the doors. (thecaterer.com)
