New Bread Bakery Approved in Farmington
A new bread bakery has been approved in Farmington, Connecticut. While the name and exact location have not yet been announced, the move expands the town's local food options.
The new bakery is named "The Barking Beagle Breadworks" and will operate as a home-based cottage operation at 19 Ridgeview Drive. It will specialize in small-batch, handmade sourdough breads using all-organic flours. The venture is owned by local couple David St. Germain and Kathleen Becker-St. Germain. The Farmington Plan and Zoning Commission unanimously approved the required special permit on May 12, 2025. David St. Germain, a commission member, recused himself from the hearing and vote to avoid a conflict of interest. This will not be a traditional retail storefront. The business model relies on a state cottage bakery license, with customers pre-ordering online and picking up their bread by appointment at a farm stand on the property. The operation's ovens have a capacity of 20 loaves at a time, ensuring minimal traffic. In addition to selling bread, The Barking Beagle Breadworks will also offer bread-baking classes from the home location. This follows a trend of home-based food businesses expanding in the area; the same zoning commission approved another cottage bakery, "Dough Mama," in April 2025. The focus on sourdough aligns with major industry trends. Demand for artisan, handcrafted bread made with natural ingredients is a significant driver in the global bakery market, which was valued at over $38 billion in 2024. In the U.S., sourdough is a leading category, produced by over 60% of artisan bakeries. Local bakeries often contribute significantly to the community economy by sourcing ingredients from nearby farms and suppliers. This practice supports other small businesses and strengthens the local food system.
