America's Largest Food Cart Plaza Opens

Vancouver, Washington just soft-opened what's being called the "largest food cart plaza in America" on the city's east side. The massive culinary hub brings together dozens of carts offering global street food in one accessible location, already drawing crowds and expected to become a West Coast pilgrimage spot for food truck fans.

The newly opened Vancouver Station Food Carts is located at 1817 SE 164th Ave. in Vancouver, Washington. The plaza has space for 44 food carts, which would make it larger than the current largest food cart pod in the region, the BG Food Cartel in Beaverton, which hosts about 31 carts. The project is owned by Tai Dang. The food cart plaza soft-opened on Monday, March 2, 2026, with a grand opening expected in the spring. Although only a handful of vendors are currently operating, including Wingz 'N Waffz and the boba tea cart Bobablastic, more than 20 are signed up and waiting for permitting. Esan Thai, a popular cart from Portland, is also among the early tenants. At the center of the plaza is a two-story, 8,000-square-foot building that features a full bar with 36 taps, a coffee shop, and an ice cream parlor. This indoor space also provides year-round seating, a fireplace, and restrooms for diners. General Manager Ryan Biornstad has stated that there are plans for nightly entertainment, including live bands, DJs, trivia nights, and bingo. The development of Vancouver Station is part of a growing food cart scene in the area and is a sister location to the successful Hillsboro Downtown Station, which hosts 27 carts. The new plaza aims to be a significant culinary destination on the West Coast, attracting both locals and food truck enthusiasts.
