Specialty Food Association Names 'SenseMaxxing' Trend

Specialty Food Association’s Fancy Forecast names "SenseMaxxing" as 2026’s Trend of the Year, with actionable ideas for brands tapping sensory experiences—aligns with seasonal shifts.

The Specialty Food Association (SFA) named "SenseMaxxing" as 2026's Trend of the Year at the Winter FancyFaire in San Diego, which took place January 11–13. This trend is about embracing experiential intensity and sensory saturation in food and beverages. SFA experts identified five additional key trends for the food and beverage industry in 2026, including Rooted Rituals, Honest Processing, The Appetite Reset, Shelf-Stable Chic, and The Promiscuous Palate. "SenseMaxxing" is a reaction to digital overstimulation and the increasing presence of AI in everyday life. Consumers are seeking experiences that feel real, imperfect, and human, craving friction, brightness, and truth rather than smooth neutrality. Kevin Ryan, Founder & CEO of Malachite Strategy and SFA trend partner, noted that "SenseMaxxing is the consumer's quiet rebellion against sameness". This trend manifests in intense sensory experiences like mouth-puckering freeze-dried candy, fruit and chili chips, shatter-shell coatings, and Szechuan peppercorn chocolate. Leana Salamah, SVP of Marketing & Communications at SFA, stated that the SFA is proud to be a leader in identifying and exploring trends that will shape the food industry in 2026. The Winter FancyFaire brought together over 12,000 industry professionals to explore these trends and innovations. For Blue Plate Catering in Chicago, "SenseMaxxing" presents opportunities to innovate menus with bold flavors and textures. Consider incorporating interactive food stations with customizable options to engage multiple senses, aligning with the trend of experiential dining. Given the increasing demand for corporate catering, explore recurring contracts featuring "SenseMaxxing"-inspired dishes to provide unique and memorable culinary experiences for Chicago businesses.
