This makes it a particular challenge for ready-to-eat foods like smoked fish. The bacteria is found in soil, water, and animals and can contaminate food at various points in the production process. Infection with listeria, known as listeriosis, can cause short-term symptoms like fever, muscle aches, nausea, and diarrhea in healthy individuals. However, it can lead to severe and life-threatening illness in pregnant women, newborns, adults over 65, and those with weakened immune systems. In serious cases, the infection can spread beyond the gut, leading to headache, stiff neck, confusion, and convulsions.
