Montesacro Team Opens Gluten-Free Italian
Viviana Devoto and Gianluca Legrottaglie's Montesacro team is opening Clementina, SF's first gluten-free Italian spot, today (March 13) [https://x.com/i/status/2031838606927524038].
Clementina replaces the team's previous venture, Bettola, at 343 Clement Street. The restaurant is inspired by their gluten-free pop-up "Alice," which itself was born from their daughter's celiac diagnosis. This personal connection led them to explore gluten-free cooking, which they believe "can strengthen craftsmanship rather than limit it". Chef Giorgio Brunella helms the kitchen, crafting regional Italian dishes with a completely gluten-free menu. Expect antipasti, pasta, risotto, and main courses featuring seafood and meat. They've also developed a Roman-style flatbread using a proprietary gluten-free flour blend. Montesacro, known for its pinsa (an ancestor of pizza), first opened in SoMa in 2015. Gianluca Legrottaglie always dreamed of using food to be an ambassador of his country. Clementina joins Montesacro and 54 Mint as sister restaurants.
