Gordon Ramsay Opens Cheshire Hotel Restaurant
Gordon Ramsay is opening a new restaurant within a luxurious Cheshire hotel following a multi-million-pound property transformation. The opening promises world-class dining and represents Ramsay's continued expansion into high-end hospitality. The venture further cements his influence on the UK's culinary map.
The new establishment, named "Gordon Ramsay at The Mere," will be the signature restaurant of the Fairmont Cheshire, The Mere. This launch is part of a substantial multi-million pound renovation of the property located on a historic estate near Knutsford, which was first recorded in the Domesday Book of 1086. This opening marks Ramsay's first fine-dining venture outside of London in over two decades. His last fine-dining restaurant outside the capital was Amaryllis in Scotland, which closed in 2004. The new restaurant's concept is being developed specifically for the Cheshire resort, focusing on "flavour-led cuisine." The hotel, formerly The Mere Golf Resort & Spa, was acquired in 2022 by the UAE-based developer Select Group. The property is now undergoing a major expansion and refurbishment to relaunch as a Fairmont hotel, which will become the luxury brand's fifth UK location. This venture deepens the relationship between Gordon Ramsay Restaurants and the Fairmont brand. Ramsay already operates three successful restaurants within the Fairmont-managed Savoy hotel in London: the Savoy Grill, the River Restaurant, and the Michelin-starred Restaurant 1890. The Cheshire opening is part of a significant expansion for Ramsay's restaurant group, which is set to open its 100th venue in London in May 2026. The global portfolio, founded in 1998, currently holds a total of nine Michelin stars worldwide. While Ramsay's restaurant empire is growing, with sales rising 21% to £95.6m in the last reported year, it also faced challenges. Pre-tax losses increased to £3.4m, largely due to one-off pre-opening costs for new sites.
