San Diego Taco Chain Announces Nationwide Franchising
A small taco chain from San Diego has finalized plans to franchise its brand across the country. The expansion could bring the company's Mexican-inspired dishes to new markets, potentially including the Bay Area, in the near future.
The San Diego taco chain going national is Mike's Red Tacos, a brand that specializes in beef birria. The company began as a food truck in 2021, founded by San Diego native Michael Touma, and quickly grew a loyal following for its slow-simmered beef and signature red tacos. The chain's rapid expansion is backed by a team of seasoned executives who were instrumental in the growth of other major fast-casual brands, including Dave's Hot Chicken and Wetzel's Pretzels. They have already secured agreements for more than 200 new franchise locations across the country in states like California, Texas, Arizona, and Illinois, with the first of these new restaurants expected to open by the end of 2026. The menu is tightly focused on birria, which is slow-cooked for hours with a special blend of spices. Their signature "red tacos" get their color from dipping the tortillas in a house-made chili oil before they are crisped on the flattop. Beyond tacos, they offer the popular beef birria in other forms like quesadillas, burritos, and even ramen. For those looking for a full meal, the "Mike's Meal" includes two beef birria tacos with cheese, chips, and a side of the essential consommé for dipping. The menu also features a "Crunchstack," which is two tostadas layered with birria, queso, and guacamole, all wrapped in a flour tortilla. For dessert, they offer mini churros. While specific Bay Area locations have not yet been announced, a corporate-run prototype and training center is set to open in Pasadena this spring. This move will serve as the blueprint for the new franchise locations opening nationwide.
