Tacos El Cabezon Goes Brick-and-Mortar
California's Central Valley food truck Tacos El Cabezon is opening permanent locations on Fresno's Fulton Street and downtown Fresno. The expansion from mobile to brick-and-mortar signals strong demand for authentic Mexican street food in the region.
The new Tacos El Cabezon storefront is located at 1234 Fulton St. in the space formerly occupied by Chicken King. Owner Armando Arias Jr. launched the wildly popular Mexicali-style taco truck in August 2025, quickly gaining a devoted following for its East L.A.-rooted cuisine. The brand built its reputation on social media, with crowds flocking to its original location at 420 W. Shaw Ave. and its subsequent regular spot at 517 W. McKinley Ave. The truck is known for using USDA Prime meat cooked over mesquite wood charcoal and serving it on handmade corn and flour tortillas. A specialty of Tacos El Cabezon is their al pastor meat, cooked on traditional vertical rotating spits known as "trompos". This method is a hallmark of authentic Mexican street food. The menu also features other popular items like tripas and asada tacos. Despite its popularity, the business faced scrutiny in late 2025. Following complaints, Fresno County health inspectors found several health code violations, including improper storage of meat. Owner Armando Arias stated that all the issues identified by the county were immediately addressed and corrected. The business came into compliance and is now fully permitted and operating normally. In addition to the new Fulton Street restaurant, another brick-and-mortar location is reportedly planned for McKinley Avenue, signaling a rapid expansion for the young business.
