New Bartolotta concept opens

High Stakes by Bartolotta has opened in downtown Milwaukee, giving the Bartolotta restaurant group a new steakhouse at 1030 North Water Street. (bartolottas.com) The restaurant takes over the longtime Bartolotta-owned space that housed The Rumpus Room, which closed in 2020 and did not reopen after the pandemic. Bartolotta announced the new concept on February 18, 2026, with a summer 2026 opening target. (onmilwaukee.com) Bartolotta describes High Stakes as a European-inspired steakhouse with a main dining room, a private dining room and the Peacock Lounge for cocktails, light bites and live music. Bartolotta’s restaurant list now includes High Stakes among its active venues. In its February announcement, the company said the restaurant was part of a broader effort to re-activate Water Street and add hospitality jobs. Bartolotta said the interiors draw on London lounges, private social clubs and 1930s Art Deco, with Milwaukee designer Jay Franke leading the look after his work on The Commodore, which opened in July 2024.
