Texas Barbecue Vets to Open Brooklyn Outpost
Two Texas barbecue restaurants, Kirbee's and Barbs B-Q, are collaborating to open a new location in Greenpoint, Brooklyn. The joint venture will feature pitmasters with experience from the highly-regarded Goldee's in Texas. The new establishment promises to bring authentic Texas-style barbecue to New York City's dining scene.
- Barbs B-Q, from Lockhart, Texas, was a semifinalist for the James Beard Foundation's "Best New Restaurant" award in 2024. The restaurant has also been named one of the best new restaurants in the country by *Bon Appétit* and *The New York Times*. - The restaurant's name is a nod to Nicki Minaj's fanbase, the "Barbz." It started as a pop-up before opening a permanent location in May 2023. - Pitmaster Chuck Charnichart of Barbs B-Q previously worked at Goldee's Barbecue in Fort Worth, which *Texas Monthly* named the #1 barbecue spot in the state in 2021. Jonny White, a founder of Goldee's, has called Charnichart "the best brisket cook in Texas." - Charnichart is known for a "new school" barbecue approach that combines traditional Texas techniques with Mexican flavors from her upbringing in the Rio Grande Valley. Signature dishes in Texas include brisket coated in Mexican spices and a green spaghetti side dish based on her mother's recipe. - The collaboration also involves Shawn Jones, the owner of Kirbee's BBQ in New Caney, Texas. Jones started his barbecue business, named after his grandfather, as a pop-up before opening a brick-and-mortar location. - The new Brooklyn establishment will join a borough with a growing barbecue scene that includes other Texas-style restaurants like Morgan's Brooklyn Barbecue and the Dominican-influenced Bark Barbecue.
