Famous Mexico City Restaurant Hits Vegas
A renowned Mexico City restaurant finally set its opening date on the Las Vegas Strip, marking the continued trend of international culinary brands targeting the U.S. market. The move leverages the restaurant's reputation and authenticity to capture foodie audiences in Vegas's competitive dining scene. This reflects ongoing opportunities for cross-border culinary partnerships.
The celebrated Mexico City seafood restaurant is Contramar, helmed by chef-owner Gabriela Cámara, who opened the original location in 1998. The Las Vegas outpost, named Cantina Contramar, is scheduled to open on March 28, 2026, inside the Fontainebleau. This project has been in development for over two years, having been first announced in September 2023. Chef Gabriela Cámara is an internationally recognized culinary figure, named one of Time magazine's 100 most influential people in 2020 and a two-time James Beard Foundation award semifinalist. Her accessible yet sophisticated approach to Mexican cooking was mentored by Diana Kennedy, and her influence extends to a Netflix documentary, "A Tale of Two Kitchens," which features Contramar and its sister restaurant, Cala, in San Francisco. Contramar is renowned for its fresh, high-quality seafood and vibrant atmosphere, aiming to replicate the experience of dining at a beachside palapa. Its most iconic dishes include the "pescado a la talla," a whole fish grilled with red and green sauces, and its famed tuna tostada, both of which have been widely imitated by other restaurants. The Mexico City location received a Bib Gourmand from the Michelin Guide in 2024. The Las Vegas restaurant is a collaboration with other prominent Mexican talents. The design is led by architect Frida Escobedo, known for her work on The Metropolitan Museum of Art's new wing, in her first U.S. restaurant project. The beverage program, featuring custom cocktails and tequilas, will be curated by Maestra Tequilera Bertha González Nieves, founder of Tequila Casa Dragones.
