Varesky's Deli Opens in Stratham

The Vareschi family brought a deep history in the restaurant industry to their Stratham venture. Co-owner Victoria Vareschi holds a Master's degree in business management and had 20 years of industry experience at the time of opening. Her brother, Gabriel Vareschi, contributed 10 years of experience, having worked alongside their father, Richard, and in other New Hampshire restaurants like T Bones in Salem and Mo-Jo's in Manchester. The deli's concept aimed to bring a New York City-style delicatessen to the Exeter area, focusing on high-quality ingredients and from-scratch preparation. The menu featured classics like Reubens and pastrami, alongside fresh tuna steak salads, turkey sandwiches with homemade cranberry sauce, and Italian Paninos. Breads and desserts were baked on-site, and the business emphasized a "farm to table" approach, sourcing from local resources like the Stratham Farmer's Market and using premium products like Boar's Head meats. The family's patriarch, Richard Vareschi, known for his involvement in "88 Restaurants," "Metamorphosis," and "Richard's Bistro," served as a consultant for the deli. The team also received support from Max Hamilton, who had experience with notable establishments such as the Tuscan Kitchen in Salem and The Common Man in Plymouth. Varesky's Deli was located at 72 Portsmouth Avenue in Stratham. Operating hours were Monday through Saturday, from 10 AM to 7 PM. The business aimed to provide not just quality food but also efficient service and eco-friendly practices as part of its core mission to ensure customer satisfaction.
